These special beans are a classic from Chihuahua, usually made with pinto beans, which are the most popular there. Today, I made them with black beans, which are commonly eaten here in Chiapas. Their delicious flavor comes from the way they're prepared.

Chop the tomatoes, onion, and jalapeños (if using). Dice the bacon and ham. Break the pork cracklings into pieces.

In a pot over medium heat, add the seasoned garlic, chorizo, and bacon. Cook until the fat is rendered and they are browned. Add the tomatoes, onion, and jalapeños, and cook until they soften a bit.

Add the ham and cook for another minute. Add the beans and enough bean broth to reach your desired consistency.

Once it starts to boil, add the pork cracklings. Let it boil for about two minutes, then turn off the heat. Serve hot.
