Ingredients

20 minutes
Per serving
  1. 4 1/4 cupscooked beans (1 liter)
  2. As needed, bean broth
  3. 10 1/2 ozpork cracklings (about 300 grams)
  4. 8 3/4 ozham (about 250 grams)
  5. 8 3/4 ozbacon (about 250 grams)
  6. 7 ozMexican chorizo (about 200 grams)
  7. 2tomatoes
  8. 1medium onion
  9. 1 teaspoonseasoned garlic in oil
  10. 3jalapeño peppers (optional)

Steps

20 minutes
  1. 1

    Chop the tomatoes, onion, and jalapeños (if using). Dice the bacon and ham. Break the pork cracklings into pieces.

  2. 2

    In a pot over medium heat, add the seasoned garlic, chorizo, and bacon. Cook until the fat is rendered and they are browned. Add the tomatoes, onion, and jalapeños, and cook until they soften a bit.

  3. 3

    Add the ham and cook for another minute. Add the beans and enough bean broth to reach your desired consistency.

  4. 4

    Once it starts to boil, add the pork cracklings. Let it boil for about two minutes, then turn off the heat. Serve hot.
