Very Crispy, Simple yet tasty. Tips : Use equal ratio of plain flour, rice flour and corn flour for this recipe depending on the amount of chicken skin on hand. Remove excess fat (fatty tissue) from the skin. Clean thoroughly and store in the freezer until you have enough to fry. Defrost completely before frying.

A - Clean and place chicken skin in a colander so the water is drained completely.

B - Combine and mix B (coating ingredients) thoroughly. Set aside.

C - Heat enough cooking oil in a deep pan for DEEP frying.

Frying the skin - Thinly coat dried chicken skin by lightly dredging the skin in flour, tap off the excess, and transfer it immediately to the pan. Fry until golden on each side. Do the same for all pieces. Deep fry until crispy or skin turn brown. Dish up.
*Alternatively, you can also directly mix the flour mixture with the skin.

For aromatic crispy chicken skin dish, fry with some finely chopped curry leaves. Serve with your favourite hot sauce.
