Nutritious crunchy spinach raita

Pour 1 cup water in a sauce pan. Bring to a boil and add the spinach.

Cook for 1 minute till the spinach wilts slightly but still retains it's color and shape. Drain and refresh under ice-cold water.

Heat a non-stick pan and dry roast peanuts for a minute. Keep aside.

Dry roast almonds and cashews till fragrant. Keep aside.

Now put sesame seeds in the pan. Roast till they change color.

Finally put raisins. Dry roast for 1-2 minutes till crisp. Keep aside.

Place the almonds, peanuts and cashews in a dry blender and crush roughly.

Beat the curd and add chopped spinach, toasted nuts, sesame seeds and raisins. Then add black pepper powder, salt and black salt. Mix well.

Prepare the tempering, Heat oil in a pan, once hot add asafoetida, mustard seeds, red chilies, and curry leaves. Let them crackle for a few seconds.

Pour tempering over the raita and Serve chilled.
