Egg Plant Salan // Baigan Ka Salan

Roast and grind all the spices to a fine paste

Wash the brinjal and cut into length size. Marinate brinjal with haldi powder and salt. Keep aside for few minutes. Heat oil in a kadai. Fry brinjal for few minutes. After frying. Transfer the brinjal in a plate and keep aside.

In the same kadai. Add little oil. Fry curry leaves, 1 tsp mustard seeds and onion. After frying the grind masala. Saute it for few minutes. Add little water and fried brinjal. Mix it properly. Cover and cook till the curry is dry. Once it is done.

Transfer to a serving dish. Pour the tempering over the curry. Ready to serve egg plant salaln
