Couscous Salad with Avocado

Measure and chop all the ingredients for the recipe. In a small pot, bring the water and salt to a boil. Add the couscous, cover, reduce the heat, and cook gently for 5 minutes. Turn off the heat and let it rest. Add the butter and stir to separate the couscous grains.

Remove from the pot and spread the couscous in a salad bowl to cool completely. Add the tomato, cucumber, avocado, and chopped parsley or cilantro. Mix well.

In a small bowl, whisk together the dressing ingredients and toss with the couscous salad. Serve at room temperature or refrigerate if serving later.
