Kashi halwa (Ash gourd halwa)

Ingredients

40 mins
3-4 servings
  1. 250 gash gourd (grated and squeezed)
  2. Squeezed water
  3. 250 gsugar
  4. 2-3 tbspghee
  5. 6-7Saffron strands
  6. 1 pinchsalt
  7. 1/2 tspcardamom powder
  8. 3-4lemon drops
  9. Cashews and raisins as required
  10. Ghee to fry roast cashews and raisins

Cooking Instructions

    Grate ash gourd and squeeze water out of it completely.

    Add the squeezed water to a hot pan and bring it to boil.

  3. 3

    Add grated ash gourd to the boiling water. Let it cook until the ash gourd absorbs the water.

    Add sugar and let it cook until it gets mixed well.

  5. 5

    Add saffron strands. Let it cook for few mins. Add salt and ghee. Stir it continuously until ghee gets mixed well with ash gourd.

    Add cardamom powder and lemon drops.

  7. 7

    Stir it continuously. At a stage the halwa will start leaving the pan. Switch off the flame.

    In another pan heat some ghee and roast cashews and raisins. Add this to the halwa.
