A rich, flavourful and comforting AF stew. Served with barley, or fresh fettucini.

Heat oil in deep pan/pot/Dutch oven

Season meat with salt and pepper. Brown in batches and place aside.

Deglaze the pan with the acid. Add olive oil and fry onions for 5min.

Add the smoked paprika, coriander seeds, peppercorns and garlic and fry for 2min. Add the peppers and fry for a further 2min.

Option 1: place meat, vegetables and cream in a slow-cooker and cook on high for 4 to 6 hours.

Option 2: add cream and meat to pot on stove. Cover and cook on low heat for 2hours. Monitor moisture levels and add some stock if it dries out.

Once the meat is falling of the bone, use a slotted spoon and remove all pieces of meat and place on a chopping board. Remove the bones from the shin, but keep the marrow. Remove bones from short rib. Roughly cut it into bite size pieces and return to pot.
