Turning sunday into funday,with home made puri thali.for good crispy puris, dough should be kneaded more to attain elastic soft texture.give rest to dough.I rolled all puris first& then fry one by one,this will give time to rest for rolled out puris as well. While rolling out puris use no to less dry flour, rolling with hands mostly using some oil. Last but most important oil should not be cold & at right temperature for frying.

Mix all dry ingredients. Add oil & mix well.knead soft dough with luke warm water around 1/4-1/2 cup.use less water & knead more to get soft elastic texture of dough.cover & leave to rest for some time.

Make small round balls or pairay from dough.roll each paira in small roti or puri.I hv used not used dry flour while rolling puris. Mostly I use hands to press puri & little rolling pan.if needed you can use dry flour to roll puris.

Keep oil to heat up.check the oil is properly heated before adding puri in oil.DO NOT add puri in cold oil.add one puri at a time in oil,it will pop up at surface.turn around to cook then take out from oil.fry all puris in same manner.some will puff up some not.
