Ingredients

4 servings
  1. 1 lbboneless/skinless chicken breast
  2. 1 tbspolive oil
  3. 1/2 Cred wine or chicken broth
  4. 1 Ctomato puree
  5. 1/2 CMonterey Jack cheese, shredded
  6. BBQ spice rub
  7. 1 tbsppaprika
  8. 1/8 tspground black pepper
  9. 1/2 tspsea salt
  10. 1/2 tspground coriander seed
  11. 1/2 tspchili powder
  12. 1/2 tspgarlic powder
  13. 1/2 tsponion powder
  14. 1/4 tspcayenne pepper
  15. Topping Ideas
  16. sliced green onions
  17. diced avocado
  18. cherry tomatoes, halved
  19. fresh parsley or cilantro, chopped

Cooking Instructions

    In a small bowl, whisk together all BBQ spice rub seasonings

  2. 2

    Rub the chicken with the bbq blend on all sides

  3. 3

    Heat oil in a large skillet over medium high heat

  4. 4

    Add your BBQ rubbed chicken and cook until golden brown and cooked through, about 4-6 minutes each side depending on thickness

  5. 5

    Set chicken aside on a plate

  6. 6

    Pour in the wine or broth and simmer until reduced, scraping the brown bits from the bottom of the pan

  7. 7

    Stir in the tomato puree and which to combine into the sauce

  8. 8

    Reduce heat and bring sauce to a simmer, return you chicken back to the pan

  9. 9

    Spoon sauce all over your chicken

  10. 10

    Sprinkle with shredded cheese

  11. 11

    Continue to cook on low heat until cheese is melted and sauce is bubbly

  12. 12

    Remove from heat and add your toppings of choice
