Roasted Tangy Beetroot

I love beetroot. I normally buy it in a jar from the store. This is my first time cooking my own beetroot. I got this recipe from my mother, God bless and keep her 😍😍
You can use balsamic vinegar as opposed to apple cider. If you do use balsamic vinegar please don’t add sugar.

Steps

Preheat oven to 180 degrees. Spiralize beetroot. On oven proof tray, spread beetroot and dress with olive oil, salt and pepper. Place in the oven and roast for 10-15 minutes. For dressing mix all the ingredients stir well till emulsified.

Remove beetroot from oven and pour dressing over. Plate and serve warm or cold. Enjoy.
