Steps

Cut all the vegetables and deep fry potatoes, yams, brinjals etc.

Now in a deep Kadai, put all the beans and peas to cook together in some oil and asafoetida

Let all the beans and peas cook for sometime in oil and then put in all the masalas along with the green garlic paste, ginger paste and green chilli paste and salt

Let all the masalas cook properly together and add tamarind pulp and jaggery into the mixture

Once all the masalas are cooked properly, add the remaining fried vegetables along with the methi vadis

Mix everything thoroughly and let it cook in the pressure cooker for 10 to 15 minutes

After the said time, open pressure cooker and garnish it with some grated coconut and coriander leaves and your undhiyu is ready to eat.
