Honey Madeleines

I wanted to replicate the delicious, moist "Honey Madeleines" sold in my go-to bakery, but I'm still far away from achieving their standard... still, these are moist and taste good.
The sweetness of the honey varies by brand, so adjust the quantity as necessary.

Place unsalted butter in a microwave-safe bowl and microwave for 30-40 seconds. Add sugar, honey and eggs and mix well with a whisk.

Add pancake mix and combine using a spatula. Pour the batter into the madeleine cups (about about 2/3 full).

Bake in a 350°F/180°C preheated oven for 13 minutes.
