Easy Scrambled Tofu with Lots of Vegetables!

The scrambled tofu that I had at a hospital when I gave birth was delicious, so I tried to replicate it.

You don't have to add egg. It's ok to pour in the beaten egg at the end.
The scrambled egg highlights its nice yellow color.
You can also use the snow peas as decoration.
I used spinach in the picture.
You can use any kinds of vegetables from your fridge. Recipe by Ryo---ko

Ingredients

4 servings
  1. 1 blockTofu
  2. 150 gramsGround meat (pork or chicken)
  3. 1Onion
  4. 1Carrot
  5. 4Shiitake mushrooms (optional)
  6. 1Snow peas, spinach, komatsuna, etc
  7. 1Egg (optional)
  8. 2 1/2 tbspplus ~ ●Soy sauce
  9. 2 tbsp●Sake
  10. 2 tbsp●Mirin
  11. 1Vegetable oil (for stir-frying)

Steps

  1. 1

    Drain the excess water from the tofu. Boil snow peas in salted water, soak in water, and cut into small pieces.

  2. 2

    Mince the onion, carrot, and shiitake mushrooms.

    Heat oil in a frying pan, make a scrambled egg, and transfer onto a plate.

  4. 4

    Wipe off the frying pan with a wet paper towel, heat oil, and stir-fry the ground meat and Step 2 ingredients.

    When the meat is cooked through, add the ● seasoning ingredients, and stir-fry. Add the tofu, and continue stir-frying.

    When the liquid has almost evaporated, turn off the heat. Add the scrambled egg and snow peas, mix them, and done.

    It's delicious to serve on rice.
