Cook the pork in a pressure cooker for 50 minutes with salt, garlic, and onion. Once done, remove from the pot and shred the meat. Marinate it with the juice of the oranges and the garlic powder while you prepare the sauce and garnish.

For the sauce, blend the tomatoes with the achiote paste, oregano, garlic, onion, vinegar, and chicken bouillon powder until smooth.

In a pot, heat the oil and add the sauce. Once it starts to boil, add the shredded pork and cook for 15 more minutes.

For the garnish, finely chop the red onion and habanero peppers (I remove the seeds to make it less spicy). Mix with vinegar, salt, lime juice, and oregano.

Done! Serve with white rice and enjoy in tacos with the garnish and a fresh green salsa.
