Lontong sayur is a kind of soup made from light coconut cream, usually filled with few type of vegetables such as, aubergine, greenbean, cabbage, tofu etc. I used what I have at home:). We used prawn here, just to add the stock taste, its not a must.
You might want to make the rice cake a day ahead. I do this the easy way, in rice cooker. You can boil this in pan, but will take about 2 hours.

Ingredients

3 people
  • Rice cake
  • 2 bagsBasmati boil in a bag (used supermarket brands, and it has to be basmati or it wont work)
  • till the rice cooker is fulledwater
  • 1/2 tspsalt
  • 1/2 tspchicken knorr - optional
  • Blends:
  • 1echalion shallot
  • 6garlic peeled
  • 8red chillies
  • 4Thai red chillies - optional
  • 1candlenut (optional)
  • 1 tspgalangal paste
  • Other ingredients
  • 1chayote/Labusiam
  • 1-2roll dried beancurd (soak in warm water till soft, take it out and cut)
  • 4baby corn slice into two
  • 1/4small cabbage, cut quite big
  • 4-6king prawn (or more to your liking)
  • 1lemongrass
  • 2kaffier lime (removed stem)
  • 1bay leaves
  • 1 tspHimalayan salt
  • 1 tspbrown sugar/sugar/erythol
  • 1 tspwhite pepper
  • 1 tspchicken knorr
  • 4 tbspoil to fry
  • 300 mlcoconut milk (if you prefer thick, add this and less the water)
  • 700 mlwater
  • 2shallots (to replace echalion shallot)

Steps

    Note how to clean chayote (I recommend using gloves as its very sticky) : prepare a bowl with 1 tsp of salt and filled with cold water. Wash clean the chayote, cut into half, take out the seed, and sliced thinly. Put all in the cold water. Leave it for 5 minutes, and start squishing the chayote, change the water till it feels clear. Drained. This is now ready to used.

    How to make rice cake: filled ricecooker with water, add salt and knorr, add the boil in the bag rice. Leave it for about 2 hours soak in the water. Then turn on the rice cooker, I used white rice button.. When it finish, take out from cooker, and set it aside. It should be quite firm. When its cold, put in fridge overnight, it will make it more firm. When this is ready to used, take it out and cut/slice. And put in microwave for about a minute for a portion.
