Gujiya is a sweet deep fried dumpling ,native to the Indian subcontinent,made with all-purpose flour stuffed with a mixture of sweetened khoya/ mawa and dry fruits .
It is specially made and consumed during Teej,Holi and Chhat in India.
Mauka Bhai hai or dastoor Bhai hai to der kis baat ki chaliye holi ke liye Gujiya banate hain.

Steps

In a mixing bowl, add flour,ghee,salt,rose water and water as required knead it into a stiff dough.
Cover it with a damp cloth and leave it to rest for 20 minutes. - 2
For filling,in a pan add mawa and roast on medium heat till light brown.keep it aside.
Now in same pan add ghee,semolina and roast well,add chopped almonds and cashew nuts,coconut powder,raisins and mix well, now mix the roasted mawa in pan and mix well.
Transfer the mixture into the bowl and keep it cool.once cool down add powder sugar and cardamom powder mix well and keep aside. - 3
Now make small balls of dough and roll it into a thick round shape or cut it from round shape cutter.
Place spoon full of filling on one half,fold the other half,press the edge gently and make design by pinching and twisting all along the sealed edge. Make all gujiya in same way. - 4
Now heat oil on medium flame and fry gujiya light golden brown.
Gujiya is ready to serve and enjoy its warmth and delicacy
