Natsumikan Citrus and Marmalade Bread

I wanted to make bread using natsumikan that wasn't overly zesty, and this is what I came up with.

I used homemade marmalade that isn't too sweet. Adjust the jam to your liking!
Cake flour gives the bread a cake-like texture. Use margarine instead of butter if you want to emphasize the citrus taste.
I added sour yogurt, which goes well with jam but use milk instead if you prefer! Recipe by yuko&martin

  1. 230 gramsBread flour
  2. 50 gramsCake flour
  3. 4 gramsSalt
  4. 10 gramsSugar
  5. 10 gramsMargarine
  6. 10 gramsSkim milk powder
  7. 50 gramsYogurt
  8. 130 gramsNatsumikan (or orange)
  9. 60 gramsMarmalade jam
  10. 3 gramsDry yeast

Steps

  1. 1

    Remove the skin and the pith from the natsumikan (or orange). You don't need to break it into segments or cut into pieces, just add it to the bread maker as is.

  2. 2

    Put all the ingredients in the break maker. If you can choose the crust type, set it for "light" then start the "baking course."

  3. 3

    This is how it looks like sliced. The bread turns a beautiful orange colour!

    Natsumikan is originally from Yamaguchi prefecture in Japan. You can see lots of natsumikan trees in my home city of Hagi. My uncle grows them.
