Ingredients

  1. Mahi Mahi filets
  2. Blackened seasoning I used cajun bayou seasoning
  3. Lime juice from 1 whole lime
  4. Avocado oil for grill grates
  5. Elote salad garnish
  6. 2 earscorn husked
  7. Cilantro
  8. Jalapeno seeded diced thin
  9. Red onion diced thin
  10. Tajin seasoning
  11. 1 tbsmayonnaise
  12. 1/2lime squeezed for juice
  13. Black beans in instant pot
  14. 1 cupdried black beans
  15. 1 Cwater
  16. 1chicken bouillon cube
  17. Red onion diced
  18. Left over chicken or any smoked meat
  19. Garlic salt and pepper
  20. 1 tspchili powder
  21. 1 tbscanola oil
  22. 4-6corn tortillas

Cooking Instructions

    Marinate in seasoning and lime juice for 20 minutes

    Heat traeger to 400 degrees use fine mesh grate. Remove from grill hot and spray with avocado oil add back to grill then grill for 5 minutes on each side.

    Mix ingredients of elote salad and refrigerate until ready to use.

    Mix ingredients of black beans in instant pot use pressure cook button for 50 minutes.

    Heat canola oil medium high heat. Fry corn tortillas until lightly browned.

  6. 6

    Plate tortillas, mahi mahi, elote salad, and garnish with green onion and queso Fresca eat with black beans also garnished with queso Fresca.
