Veg. Chettinad Curry

Chettinad is a type of aromatic and flavourful curry which belongs to Tamilnadu cuisine. Aromatic and flavourful spice mix is prepared by roasting whole spices and fresh coconut. Use of coconut milk and aroma of roasted spices make this curry delicious. Usually Chettinad curry is prepared using chicken but it can be even prepared by using mushrooms and mix vegetables. This curry can be served with plain dosa and rice. It tastes equally delicious with paratha as well.

Steps

First of all prepare all the vegetables required for the curry. Soak cashew nuts and poppy seeds in warm water for 10 to 15 minutes.

Heat 1 tsp oil in a pan and add all the whole spices along with coconut and roast it at low heat until aromatic. Let it cool down at room temperature.

Add roasted spices to a mixer jar along with cashew nut, poppy seeds, ginger and garlic paste. Add little water and grind everything to a paste.

Heat oil in a pan and add mustard seeds. When it crackles add cumin and curry leaves along with finely chopped onion. Saute it until light pink in colour. Now add turmeric, red chilli powder, salt and finely chopped tomatoes. Mix everything well and cook until tomatos are soft. Now add prepared spice paste to it and mix it well.

Cook it on medium heat for 2 minutes. Now add vegetables to it along with 1.5 cup of water and give it a good mix. Cover and cook it on medium heat for 15 to 20 minutes or until vegetables are done.

When the vegetables are cooked properly, add coconut milk to the curry and mix it well. Now cook it on medium heat for 5 minutes and turn off the heat.

Veg chettinad curry can be served with plain dosa, rice or paratha. I have even prepared rasam to go with it.
