Cured Ham Salad Sushi Rolls [Ehoumaki for Setsubun]

I wanted to make salad sushi rolls with my favorite ingredients.
I omitted mayonnaise to make it healthier considering the salty flavor of the cured ham and the rich taste of sliced cheese.
Please add mayonnaise if you'd like.

Place whole sheet of nori on makisu and cover thinly with sushi rice. Leave about 1 cm uncovered on your near-side, and 2 cm on your far-side. A rubber spatula comes in handy.

Top with halved nori and sliced cheese.

Top with cured ham.

Top with scrambled eggs, avocado sliced in strips, and wrap up.

Serve with lemon juice and grainy mustard.
