I created a flavorful dip by combining my favorite ingredients. I wrote this up as a memo to myself. I'm experimenting .
Mentsuyu will make this really flavorful and shio-koji will give it a lighter taste. Adding mayonnaise will give a tart accent. Please adjust according to your tastes. Try adding a bit of lemon juice, too! Recipe by miyuki12

Cooking Instructions

Put all the ingredients except for those marked ◎ into a food processor and blend. Add the ◎ ingredients as needed to finish.

Spread on crackers or enjoy with bread. It's also great with salad.

I tried putting vinegar in soy milk and it thickened and became creamy. I thought it looked like yogurt!1. I used the type of soy milk you can make tofu with (a full fat, unsweetened soy milk). When I tried making it with reduced-fat soy milk, it didn't thicken. But when I tried it with a mixture of half regular soy milk and half reduced-fat soy milk, it worked.2. Once the soy milk has thickened, if you add more vinegar afterwards, the creaminess will be gone.3. Depending on the kind of soy milk used, you may need to add more vinegar. I have been having a bit of an issue with my arm lately, with the weather changing from hot, to cool, humidity, allergies, that’s about it! 🙂 I just needed to spoil myself today with a nice dip and a small bag of chips…YES POTATOES CHIPS…:) Sometimes you just need to treat yourself with a bit of junk food and my junk food is potatoes chips. I wanted to make something that was a bit macrobiotic, healthy and delicious. Even if something is healthy, if it doesn't taste that good... it's not worth eating. Apparently beet sugar is good in macrobiotic cooking. Try reducing the sugar, or using honey, maple syrup, or cane sugar instead - sounds healthy.Even thought these puddings have no cream in them, they're really rich and delicious. They contain cocoa polyphenols, soy isoflavones, calcium, and vegetable proteins. On top of that, gelatin contains collagen!
