Tomato sauce recipe adapted from 'the best tomato sauce in the world!' recipe.
Steps

Peel tomatoes by: cutting around core and remove. Cut X in skin at other end. Put in boiling water for a minute and then dunk into iced water. The skin should slip off.

Roughly chop the tomatoes and put in a saucepan with butter, onion, half the garlic bunch and a pinch of salt.

Cook uncovered at a slow simmer for around 45 minutes. Stir occasionally and mash tomatoes with the back of a wooden spoon.

Remove onion and garlic. Blend mixture to make sauce smoother.

Return to saucepan and simmer until sauce has thickened. This can take up to a hour depending on how juicy your tomatoes are.

Pour into hot sterilised jars or bottles and seal. Refrigerate after opening.
