Ingredients

  1. For the crust
  2. 3/4 cupbutter
  3. 1/4 tspvanilla extract
  4. 1-3/4 cupsifted all-purpose flour
  5. 1/2 cupsifted confectioner's sugar
  6. For the filling
  7. 3whole eggs
  8. 1 cupwhite sugar
  9. 1/2 tspsifted baking powder
  10. 3 tbspsifted all-purpose flour
  11. 1/2 tspfine salt
  12. 1/3 cupkalamansi juice, plus 1 tsp rind
  13. Note: you make replace kalamansi with lemon

Cooking Instructions

    Preheat oven to 350⁰F. Line the bottom and sides of an 8 by 12 inch (2" high) rectangular baking pan with aluminum foil. Set aside.

    Combine ingredients for the crust in a mixing bowl. Press the mixture against the bottom of the prepared pan, covering it evenly and completely. Bake for 15 minutes to dry up a bit.

    In another mixing bowl, using an electric mixer, beat eggs until frothy. Add remaining ingredients. Continue to beat until somewhat thick.

    Pour mixture over the baked crust. Continue to bake for 35 to 40 minutes more or until edges are light golden brown.

    Allow to cool completely. Dust the top with 3 tbsp confectioner's sugar and slice into bars. Enjoy!
