Ingredients

  1. 1 cuplentils
  2. 3 cupswater or chicken stock
  3. 2 cupdiced onion (1 large onion)
  4. 8 clovesgarlic minced
  5. 1 tbspfresh minced ginger
  6. 1 cupdiced carrot
  7. 1 cupcanned diced tomato
  8. 2-3 tbspBerbere Spice mix
  9. Salt to taste
  10. Olive oil

Cooking Instructions

  1. 1

    Sauté onion, garlic, carrots, and ginger for 5 to 7 minutes

  2. 2

    Add Berbere spice mix sauté for 2-3 minutes

  3. 3

    Add lentils, diced tomatoes, salt, and water (or chicken stock or bullion)

  4. 4

    Bring to a boil and cover, turn to low cook until lentils are tender (30 minutes)
