Cou-cou and flying fish is the National dish of Barbados. Coucou was originally brought by Africans during slavery and is of similar texture to grits. The cornmeal and okra form together to make a savoury porridge-like meal. The flying fish has small pectoral fins, almost winglike, that enable them to glide along the sea surface . The flying fish was mainly found in the waters of Barbados but because of climate change, the majority of the flying fish have migrated to Toboggan waters

Ingredients

  1. Coucou recipe ingredients
  2. 8 ozyellow cornmeal
  3. 12okras (sliced a quarter-inch thick)
  4. 4 cupswater
  5. 1/8 tspsalt
  6. Flying fish recipe ingredients
  7. 12flying fish filets
  8. 3(beaten) eggs
  9. 1 cupflour
  10. 1 cupBreadcrumbs
  11. 2 cupssoya bean oil
  12. 2 tbspssalt
  13. 2limes
  14. Creole sauce
  15. 2crushed garlic gloves
  16. 1sliced onion
  17. 3 tbspsOlive oil
  18. 2sliced bell peppers
  19. 1 tbsp(finely chopped) thyme
  20. 8 ozstewed tomatoes
  21. 1 tspsugar
  22. 1 tbsppepper sauce (vinegar, mustard, salt, pickled hot pepper)
  23. 4 tbspsParsley (chopped)
  24. 1/2 cupstock
  25. Salt

Cooking Instructions

    For Cou Cou

    Pour three cups of water into a pot.

  3. 3

    Add salt and the sliced okra, bring to a boil and then turn off the heat.

  4. 4

    Use a slotted spoon or strainer to remove the okra and set aside. Retain the salted water.

    In another pot on low heat, combine the fine cornmeal and one cup of water.

    Use a wooden spoon or whisk to stir this mixture. Break up any lumps of cornmeal.

    As the cornmeal mixture begins to thicken, gradually add the salted water.

    Continue whisking. After three minutes more, mix in the cooked okra and turn off the heat.

    Spoon some Cou Cou into a bowl greased with olive oil.

    As the Cou Cou begins to get firm, overturn the bowl onto a serving dish to plate it.

    For Flying Fish

    Marinate the flying fish fillets in a mixture of water, lime juice and salt for ten minutes.

    Remove the filets and pat dry with a paper towel.

    Coat each fillet in dry flour, then the beaten egg mixture and lastly in breadcrumbs

    Heat the soybean oil and fry each fish fillet until golden brown, and Set aside.

    For Creole Sauce

    To make the creole sauce, begin by adding oil to a skillet or frying pan. Sauté the onions, bell peppers and garlic in the hot oil for about a minute.

    Add the thyme, sugar, stock and pepper sauce. Cover the pan and let the sauce simmer for about fifteen to twenty minutes.

    Add the salt and chopped parsley. Turn off the heat.
