Steps

Blanch the cauliflower florets in boiling water by adding a little salt and 1/2 tsp turmeric powder. Once ready strain out the water and keep it aside.

In a pan heat 1 tbsp oil on medium flame. Add 1tsp cumin seeds, fennel seeds, ginger, green chilies, cinnamon, and cardamom.

Saute for 1 to 2 minutes until the raw smell is gone. Then add the sliced onions and continue cooking on low flame till the onions turn translucent.

Now add the tomatoes, once the tomatoes start turning mushy add turmeric, chili powder, coriander powder. Cook till the mix starts leaving the oil.

Now add the soaked cashews and again mix well. Turn off the flame and keep aside to cool.

Once it cools grind to a coarse paste.

In the same pan heat, 1 tbsp oil add 1/2tsp cumin seeds and curry leaves. Once it starts to splutter add the paste and cook for a minute.

Now add the blanched cauliflower into this. Adjust the consistency by adding water and add salt as per taste.
Continue cooking for about 2-3 minutes and the korma is ready.
