I had 3 pumpkins in my cupboard, time to give one a new life. I found this recipy on "Kokerellen.nl".
This is glutenfree and if you use egg subtitute it is even vegan.

Ingredients

40 min
6 to 8 servings
  1. 180 grrolled oats
  2. 180 gr(fresh made) pumpkin puree
  3. 2eggs
  4. 2 tbsun flower oil
  5. 80 gr(fresh) unsweeted apple sauce
  6. 70 grcoconut blossom sugar or brown sugar
  7. 2 tbbaking powder
  8. 2 tbbiscof spices or 1 tb cinnamon and ginger
  9. Pinchsalt

Cooking Instructions

  1. 1

    Mix the oats in a blender until you have oatmeal

  2. 2

    Put the rest of the ingredients together in a bowl

  3. 3

    Mix with a scraper or spoon

  4. 4

    Put in a greased cake tin.

  5. 5

    Bake for 30 min in a 180°C oven.

  6. 6

    Serve. You can put frosting on it but I do not like it
