Beef Stroganoff is a popular Russian dish of small pieces of beef fillet sauteed in sour cream sauce together with onions and mushrooms. I've been trying to eat more vegan and also trying different recipes for jackfruit. One of the hardest parts of going vegan is giving up traditional meals that you're used to having regularly. This was a dish from my childhood that my Hungarian stepfather made at least once a month! Ingredients

6-8 servings
  1. 7 ozjackfruit pieces (about 2 cups)
  2. 12-16 ozbag egg-free wide ribbon noodles
  3. 6 1/2 ozcan mushrooms, sliced
  4. 1/3medium yellow onion, chopped
  5. 1medium green onion, chopped
  6. 1/2 cuppickled banana peppers, chopped
  7. 2 tbspnutritional yeast
  8. 1 tspsalt
  9. 1 tsppepper
  10. 1 tspgarlic salt
  11. 1 tsponion powder
  12. 1 tspparsley
  13. 1 tsppaprika
  14. 1/4 cupflour
  15. 2 tbspvegan butter or 1 tbsp oil
  16. 1 tspDijon or stone ground mustard
  17. 1 cupunflavored vegan milk
  18. 1 1/2 cupvegetable broth

Cooking Instructions

    Preheat oven to 400°. Boil noodles to al dente, drain, & set aside. Also, cook jackfruit by covering with water, bringing to a boil, & then simmering for 10 minutes. Drain jackfruit as well and then break up pieces with a fork a bit, set aside.

    Next, place cooked noodles in a medium casserole dish. Mix in milk, butter or oil, vegetable broth, and flour.

    Then, evenly mix in green & yellow onion, peppers, & mushrooms.

    After draining & separating jackfruit meat, add into casserole dish, as well as nutritional yeast. Combine well.

    Finally, mix in all seasonings & mustard and combine evenly. Cook in oven covered with foil for 45 minutes.

    Remove from heat & let cool. Serve & Enjoy!
