Ingredients

  1. 3 piecespotatoes
  2. 4 piecesking oyster mushrooms
  3. 3 piecesbig onions
  4. 4 piecestomatoes
  5. 50 gcoconut powder
  6. 2 tablespoonscurry powder
  7. 1 teaspoonsalt
  8. 300 mlwater
  9. 5 tablespoonscooking oil
  10. 110 gtofu puff

Cooking Instructions

    Cut into small square size with scissors.

    Rinse once with water and then cut into small size.

  3. 3

    Dice the tomatoes.

  4. 4

    Dice the onion.

  5. 5

    Peel and then cut potatoes into small size.

  6. 6

    Dissolve the coconut powder with 150g water in a small bowl.

  7. 7

    Heat up cooking oil in a frying pan using high heat, stir fry king oyster mushrooms for 1 minutes. Remove the cooked mushrooms to leave aside, leaving the oil in the frying pan.

    Turn up high heat, stir fry the onion for 2 minutes.

    Add tomatoes. Stir fry together with the onion for about 2 minutes. Use the spatula to gently mash and soften it.

    Add salt and curry powder. Cook evenly for about 1 minute.

    Add potatoes. Cook evenly for 2 minutes.

    Add the cooked mushrooms. Mix evenly.

  13. 13

    Add coconut milk. Cook evenly for 2 minutes.

  14. 14

    Add about 150ml water.

  15. 15

    Add tofu puff. Mix them evenly so that they are dipped in the sauce. Cook for about 2 minute.

    Ready to serve.

Love to cook and experiment with new cooking methods in addition to traditional stir fry recipes. Living in Singapore, a fantastic place to eat and experience (almost) every kind of cuisine in the world.
