Simple and delicious. A favorite Sunday meal made with just a few basic ingredients.

Pat the chicken dry with paper towels and let it come to room temperature.

Drizzle olive oil all over the chicken, then season with salt, pepper, and oregano. Rub the seasonings into all the pieces with your hands.

Do the same with the potatoes. Place them in the baking pan and drizzle with lemon juice. Arrange the chicken on top, skin side down.

Drizzle with olive oil and add the water. Scatter the thyme, more salt, pepper, oregano, and the unpeeled garlic cloves throughout the pan with the potatoes.

Cover and bake in a preheated oven at 400°F (200°C) for 1 hour.

Uncover, stir the potatoes, turn the chicken pieces over, and place a little butter on the chicken skin. Bake for about 1 hour more.

Let the dish rest for 15 minutes before serving.
