Its been a while I had this meal, so I decided to make it today
Cooking Instructions

Pour some amount of chicken stock in a bowl, add the couscous, give it a stir and set aside
The stock should not be much so it doesn't come out suggy

Cut all the veggies to your desired shape set aside

In a non sticky pan, pour out some oil, add the onion and fry for 4 min..the add the veggies, curry, seasoning cube, black pepper and toss, let it fry on a low heat for 5- 8min
NB: you don't need too much maggi because the stock is already tasty, you only need it to spice the veggies

Add the soaked couscous and continue frying till it's well combined, keep stiring it for 3 more min and turn off the heat

Garnish with the salad, fired fish or any protein of your choice followed by plantain and chilled juice

I found this dish at the salad bar at my work's cafeteria. I dissected it and was able to create it. My family loves it. I usually have to make a double batch. It goes really fast. Perfect for lunch.
