Thai Green Curry Chicken

Ingredients

30 minutes
  1. 200 gchicken thigh
  2. 150 mlwater
  3. 200 mlfull fat coconut milk
  4. 50 ggreen curry paste
  5. 12 green bird's eye chillies - ground into green curry paste
  6. 3red bird's eye chillies
  7. 3green bird's eye chillies
  8. 5kaffir lime leaves
  9. 1.5 tspfish sauce
  10. Fine granulated sugar/palm sugar to taste

Cooking Instructions

30 minutes
  1. 1

    Set Instant Pot on saute mode.

    Pour coconut milk into pot.

  3. 3

    Add in green curry paste and mix well.

  4. 4

    Add Kaffir lime leaves and bird's eye chillies.

  5. 5

    Add chicken and eggplant.

  6. 6

    Stir well until chicken is fully cooked through

  7. 7

    Add fish sauce and sugar, adjust sugar according to taste.
