Apple & Sour Cream Cake

A photo of old German Apple Cake inspired me to make this cake. The author of the blog wrote the cake could be made with Pound Cake batter covered with sliced Apples and Sour Cream. I used my ‘Basic Pound Cake’ batter. I covered the batter with Apple slices and sweetened Sour Cream. It didn’t work well. The cake was too buttery and bland, and the Apple and Sour Cream topping turned too soft. The second attempt went very well. I reduced Butter and added extra Sugar, Zest and Juice of 1 Lemon to the batter. I mixed Egg with the sweetened Sour Cream. It was delicious and now I can share the recipe with you.

Cooking Instructions
- 1
Preheat oven to 180℃. Line a cake tin with baking paper. *Note: I used 18cm x 27cm cake tin. Please use a similar size tin.
- 2
Mix softened Butter and Sugar in a large bowl, add Eggs one at a time, mixing well with a whisk. Add Lemon Zest and Juice, then add Flour, and mix to combine. Spread in the prepared tin evenly.
- 3
Peel Apples, remove the core, and cut into 2-3mm thin slices. Arrange the slices over the cake batter, then sprinkle with Ground Cinnamon.
- 4
In a measuring jug OR bowl, combine Sour Cream, Sugar and Egg, and pour the mixture over the Apple slices evenly.
- 5
Bake for about 40 minutes OR until top is nicely golden and cooked through. Stand the cake in the tin for 5 minutes, then carefully transfer onto a wire rack to cool.

French Apple Cake French Apple Cake
I am not a cake person. I would trade a red velvet cheesecake for a cookie anytime. I somehow dislike the light airy sponginess. So, when it comes to the cakes that I would eat are those that are dense, fudgy or custardy. More like a brownie or a parisian flan consistency. For this Thanksgiving special, I decided to make a simple French apple cake.Call me weird, but I am that type of person who adore very simple cakes without all the fancy frosting or decorations. Don't get me wrong tho. I do admire cakes with excellent frosting art. I love how this cake draws natural flavors from the apples. It is custardy, not too overly sweet and the apples add a nice crunch.I am using a mixture of apples; gala and granny smith. Granny smith tends to be on the tart side and while this cake depends entirely on the apples for flavors, I would highly recommend use a sweeter red apple in the mix. Gala is a great choice. I decided not to peel the Gala apples cos I like the contrast between peeled and unpeeled. I am also using a mixture of sugar. Again, contrast between granulated and dark muscovado sugar. I decided to serve my apple cake with apricot compote, vanilla bean ice cream and a drizzle of beurre noisette. Beurre noisette is actually browned butter. I think we should get started with the recipe instead of me talking too much. Daniel Lim -

Apple and Oatmeal Cake Apple and Oatmeal Cake
The apple cake with oatmeal and eggs is a healthy and delicious alternative to the classic apple cake. The addition of oatmeal gives the cake a rustic texture and a slightly nutty flavor, while the eggs make it soft and light.Variations and tips: * For a lighter version, you can replace the sugar with a natural sweetener (e.g., erythritol). * You can add other ingredients to the batter, such as chopped walnuts, almonds, or other dried fruits. * For a moister cake, you can add Greek yogurt to the batter. * You can add oat flour or whole wheat flour to the batter to make the cake even richer. * You can add lemon or orange zest to the batter to give the cake a fragrant aroma. I don't think I've ever had a lighter or tastier apple cake, and I highly recommend it. I first saw this super easy and delicious recipe when the beloved Vasilis Kallidis made it on Eleni Menegaki's show a few years ago, and I was curious to try it because it's basically an apple cake with sponge cake on top—the flavor is truly amazing. Whenever I make it, it barely lasts until the next day! Γωγω..#Corfu..!!!Translated from Cookpad Greece -

Apple Cake Apple Cake
I love apples. Not only they taste good raw, they also have so much potential in them: apple pies, applesauce, steamed apples (traditional Chinese dessert, good for sore throats), and finally apple cake! This simple recipe my favourite kind of apple cake. Basically you can just dump all the ingredients into a bowl, mix them up and pop it into the oven and you're good to go! Pair the cake with some ice cream and that is how you spellH-E-A-V-E-NPS. I used molasses sugar in the picture, that's why the cake is dark. Any sugar is fine, I have tried using gula melaka (coconut sugar) and honey. Just watch out for the consistency of the batter: I had to add a little more flour when using liquid sugar. Yoru -
