Gujarati Bajri Methi Masala Vada or Methi Dhebra are the perfect snack for Sheetla Satam. They are the perfect combination of spicy, sweet and tangy – the Gujarati golden ratio! Best served with tea, chutney or yogurt. This is a delicious and tasty vadas, which are ideal to be served with tea in the evening.

First of all, sift the pearl millet flour in a big pot and add sorghum flour, rava, wheat flour, gram flour and mix it.

Now add ginger, garlic and green chilli paste to it, add carrom seeds (ajwain), white sesame seeds, red chilli powder, coriander cumin powder, garam masala, turmeric powder, salt, sugar, asafoetida and baking soda and mix. After that add fresh fenugreek leaves and green coriander leaves and mix well.

Now add curd to this mixture and mix well. After that add little water as required and knead the dough. (Add water to the flour only if needed as curd binds the flour)

Now add oil to this flour dough and knead the dough well and cover it for 15 minutes and keep it aside. After that, make a round balls from this dough and make a round vada and stick white sesame seeds on it.

Now heat oil in a pan. Once the oil gets hot, add the vada one by one to the hot oil and fry on slow to medium flame until golden brown in color.

Now our very healthy and soft inside, puffed bajri methi masala vada is ready to serve. This vada is enjoyed with tea or coffee. This vada can be stored outside for 2 to 3 days.
