Ingredients

  1. 1 cuppearl millet flour
  2. 1/2 cupsorghum flour
  3. 1/4 cuprava / semolina
  4. 3 tbspwheat flour
  5. 2 tbspgram flour / besan
  6. 2 tbspginger + garlic + green chilli paste
  7. 1/2 tbspcarrom seeds/ ajwain
  8. 2 tbspwhite sesame seeds
  9. 1.5 tspred chilli powder
  10. 1/2 tspturmeric powder
  11. 1/2 tspcoriander cumin powder
  12. 1/2 tspgaram masala
  13. as per tasteSalt
  14. 1 tspsugar
  15. 1/4 tspasafoetida
  16. 1/4 tspbaking soda
  17. 1/2 cupfinely chopped fresh Fenugreek leaves
  18. 1/4 cupfinely chopped green coriander leaves
  19. 1 cupsour curd
  20. as requiredWater as per required
  21. 1.5 tbspoil for moin
  22. as requiredOil for deep frying
  23. 👉 For Garnishing :--
  24. as requiredWhite sesame seeds

Steps

  1. 1

    First of all, sift the pearl millet flour in a big pot and add sorghum flour, rava, wheat flour, gram flour and mix it.

    Now add ginger, garlic and green chilli paste to it, add carrom seeds (ajwain), white sesame seeds, red chilli powder, coriander cumin powder, garam masala, turmeric powder, salt, sugar, asafoetida and baking soda and mix. After that add fresh fenugreek leaves and green coriander leaves and mix well.

    Now add curd to this mixture and mix well. After that add little water as required and knead the dough. (Add water to the flour only if needed as curd binds the flour)

    Now add oil to this flour dough and knead the dough well and cover it for 15 minutes and keep it aside. After that, make a round balls from this dough and make a round vada and stick white sesame seeds on it.

    Now heat oil in a pan. Once the oil gets hot, add the vada one by one to the hot oil and fry on slow to medium flame until golden brown in color.

    Now our very healthy and soft inside, puffed bajri methi masala vada is ready to serve. This vada is enjoyed with tea or coffee. This vada can be stored outside for 2 to 3 days.
