The beauty of it lies in it’s simplicity of ingredients put together, creating a visually appealing dish – like a poetry on a plate. The rich green kofta (shaam) stuffed with paneer (savera) looks beautiful on silky smooth, aromatic orange gravy, as it creates a great visual with it’s play of colors, textures, flavors.

Ingredients

45-50 minutes
2-4 people
  1. 500 gramfresh spinach (palak)
  2. 100 grampaneer (grated)
  3. For gravy-
  4. 1onion (sliced)
  5. 2-3red tomatoes (cut into cubes)
  6. 2green cardamom
  7. 3-4cloves
  8. 1bay leaf
  9. 4-5whole black pepper
  10. 2dry red chilli
  11. 1/2 inchcinnamon
  12. 4-5cashews
  13. 1 tablespoonbutter
  14. 1 tablespoonolive oil (you can use any oil)
  15. 3-4garlic cloves
  16. 1 tsphoney
  17. as per tasteSalt
  18. For paneer-
  19. 1/2 tspcardamom powder
  20. as requiredSalt
  21. 1/2 tspblack pepper powder
  22. For palak -
  23. 1 tablespoonbutter
  24. 1 tablespoonbesan
  25. 2-3garlic cloves (finely chopped)
  26. as requiredSalt
  27. as requiredFresh cream for decoration
  28. 2-3 tablespooncornstarch

Cooking Instructions

45-50 minutes

    First take palak and wash it properly. Then take water in a pan and boil palak in hot water for 1-2 minutes. Then strain and put in ice cold water. This will prevents it’s colour. Keep aside and strain again and squeeze it properly.

    Then chop it. Now take paneer and add cardamom powder,salt and black pepper powder. Mix well and make small balls.

    Now heat a pan and add olive oil, garlic and besan and cook for a minute. Then add chopped palak and add salt. Cook this mixture until it becomes dry. Keep aside and let it cool.

    Take one pan and all gravy ingredients with 2-3 cup of water and cover it. Cook this 15-20 minutes on medium flame.

    Now heat oil in a kadai. Take one small portion of palak in you palm and spread it like a roti and then put small paneer roll into it and cover it very nicely make sure palak has covered full paneer ball. Take come cornstarch and just cover it very quickly with cornstarch and fry it.

    Palak with panner balls are ready. Now after 15-20 minutes later put the flame off and churn onion tomato mixture snd strain it. Then boil it for another 4-5 minutes then add salt as per taste. Add little honey and cream. Honey will give your gravy a sweet and rich taste.

    Now take one little wide bowl. First pour the creamy gravy then cut palak ball into two pieces snd decorate it. Garnish some cream. Super tasty snd perfect for winters Sham savera is ready.

    This is one of my family’s favourite dish. We eat it with lachha paratha or tandoori roti.
