Rai wala Aloo Achaar

During summers we all prefer to have light healthy meals but as soon as winter arrives, we’re all tempted to have hot spicy food, stuffed parathas, and pooris.
My mother makes some delectable and simple seasonal pickles during winters which goes very well with everything. I love her Aloo ka achar very much, which I am posting today. She makes this aloo ka achar every winter. This pickle is a constant hit with everyone.

Rai wala Aloo Achaar

Wash and boil baby potatoes. Then peel the potatoes and keep aside.

Now heat oil in a pan until it becomes smoky then keep aside and let it be cool. Now roast rai in a dry pan and churn it.

Then keep potatoes in a big plate and mix all remaining ingredients. Mix well. Then add oil and store in a glass container. Don’t keep it in sun. In a day or so your aloo rai ka achaar is ready. Believe me in winters this is one of my family’s favourite. We eat this achaar with matari or paratha.
