Making kolhapuri masala:
Heat oil in a pan over medium flame. Add black cardamom, green cardamoms, star anise, cumin seeds, coriander seeds, cloves, cinnamon sticks. Saute for 1-2 minutes and make sure the whole spices do not burn. Let it cool. Make a smooth paste by adding 2 tbsp of water. Keep aside. - 2
Now cut all the above-mentioned vegetables except green peas.

Now heat oil in a kadhai to fry vegetables and now fry vegetables on medium flame just for 3-4 minutes.

Fry the rest vegetables just for 3-4 minutes

Keep aside all the fried vegetables.

Make cashew paste.

Now in a kadhai add oil. Then add 1/2 tsp sugar. When it turns golden brown add asafoetida, 2 whole dry red chilies, and add chopped onions, and stir until turns golden brown. Then add ginger garlic paste. Add 1/2 tsp Kashmiri red chili powder and 1/2 tsp turmeric powder. sautee for 5 minutes.
Add chopped tomato. Mix well. - 8
Now mix cashew paste and tomato puree. Then add to the masala.

Now add previously made kolhapuri masala and cream. Mix well. Cook for 10 minutes over low to the medium flame by adding a little amount of water to avoid burning masala.

Now add the previously fried vegetables to the masala. Add salt. Mix well. Cook for 10 minutes. Add garam masala. Mix well and cook for 5 minutes again. Check that all vegetables are well cooked. Now it's done.

Transfer to a serving bowl garnish with some chopped coriander leaves.
