This is how my Yucatecan family cooks this dish. I hope you enjoy it as much as we do. The secret to this recipe is the special seasoning paste for steak (recado para bistec) 🥰

Cut the pork steaks into smaller pieces (not as thin as fajitas) and season with salt and pepper. In a large pot or deep skillet, heat a little oil and fry the pork for about 10 minutes, until the meat changes color. Remove the pork and set aside.

As the meat cooks, it will release juices. Remove and reserve these juices to add back later.

While the meat is frying, peel the potatoes and slice them into rounds. Sauté the potatoes in the same pot you used for the pork.

After about 10 minutes, return the pork to the pot.

Dissolve 1 teaspoon of recado para bistec in a little room temperature water and let it sit.

Slice the onion into thin strips. Add the onion, garlic, cilantro, reserved meat juices, and sweet pepper to the pot. Pour in the dissolved recado. Add enough water to cover the ingredients.

Cover and simmer over low heat for another 20 minutes.

Serve with white rice if you like.
