A classic Sicilian side dish that's quick and delicious to make during the winter, taking advantage of seasonal fruits and vegetables.

Thinly slice the green onions and set aside. Peel the oranges, removing as much of the white pith as possible, and slice them thinly.

Wash the fennel bulbs and slice them thinly, just like the oranges and green onions. On a serving plate, start arranging the salad: begin with the fennel, then add the orange slices, green onions, black olives, and finally the anchovies in oil.

In a small bowl, whisk together the juice of one orange, olive oil, salt, and pepper. Drizzle the dressing over the salad and serve.
