Thai red curry is a dish in Thai cuisine.It is made with coconut milk,red Thai paste and vegetables.Thai curry is different from our Indian curries.It can be vegetarian or non -vegetarian.In winters we have so many vegetables,that is why I like this healthy dish.I have used readymade Thai red paste, coconut milk (Dabar) and lots of vegetables.

Heat oil in a pan, add garlic and saute. Add beans and carrots first. Cover and cook for 3-4 min. Then add the rest of the vegetables and 1/2 t.spoon. salt. Keep it aside.

In the same pan add coconut milk and curry paste. Cook it on low heat. Keep on stirring. Add 1/2 cup water and boil. Add all the vegetables and the rest of the salt and sugar. Cook it for another 3-4 min.

Your Thai red curry is ready to serve. Enjoy it with plain rice.
