Thai red curry is a dish in Thai cuisine.It is made with coconut milk,red Thai paste and vegetables.Thai curry is different from our Indian curries.It can be vegetarian or non -vegetarian.In winters we have so many vegetables,that is why I like this healthy dish.I have used readymade Thai red paste, coconut milk (Dabar) and lots of vegetables.

Ingredients

4 people
  • 1/2 cupCarrot (.cut into pieces)
  • 1/2 cupMushroom (cut into pieces)
  • 8-9Broccoli florets(boiled in salty water and strained,)
  • 1/4th cupBeans (finely chopped)
  • 1/2 cupSweet corn (boiled)
  • 1/4th cup Capsicum cut into 1 inch pieces
  • 200 mlCoconut milk
  • 11/2 tbspThai red curry paste
  • 1 tbspGarlic(finely chopped)
  • 2 tbspOil
  • 1 teaspoonSalt and Sugar each

  1. 1

    Heat oil in a pan, add garlic and saute. Add beans and carrots first. Cover and cook for 3-4 min. Then add the rest of the vegetables and 1/2 t.spoon. salt. Keep it aside.

    In the same pan add coconut milk and curry paste. Cook it on low heat. Keep on stirring. Add 1/2 cup water and boil. Add all the vegetables and the rest of the salt and sugar. Cook it for another 3-4 min.

    Your Thai red curry is ready to serve. Enjoy it with plain rice.
