Banana White Chocolate chips Cupcake with Citrus Buttermilk Frosting

Many years ago I started to follow Anna Olson to learn how to bake and share the food to my community. This recipe is actually an alteration to meet my passion on white chocolate and citrus. The sweetness of buttercream and banana cupcake will balance if we add on citrus into it.
This recipe is indeed a double volume. You must divide into half if intend to serve for a dozen cupcake

Banana White Chocolate chips Cupcake with Citrus Buttermilk Frosting

Steps

Preheat the oven for 10mins at 160 degrees celcius

Mix all dry ingredients

Peel banana skin and smash the bananas using spatula/ fork
- 4
Melt the butter until liquified
- 5
Add eggs and all wet ingredients at once. Mix well until incorporated
- 6
Add dry ingredients into wet ingredients

Add white chocolate chips
- 8
Place papercup into the mold
- 9
Scoop the batter using ice cream scoop
- 10
Bake the cupcakes at 160 degrees celcius for 25mins or until skewer comes out clean

Using both top and bottom heat for baking

Let cupcakes cool at room temperature before topping with citrus buttercream frosting

Sift the sugar before mixing with butter to avoid clump
- 14
Mix butter and icing sugar for 10 seconds at low speed
- 15
Gradually beat in icing sugar until fully incorporated, add vanilla, milk for about a minute, medium to high speed until it smooth

Let the frosting chills for 5 minutes in the fridge.
Decorate the cupcakes as you wish 😘
