I adore all types of Mexican, South American and Guatemalan food. I love to experiment with different aspects of all of them. So I decided to use red corn masa and ground chicken together. Seasoned the mixture with wonderful guajillo, ancho, habanero and aji pepper powder as well as comino. Then I used a tortilla press and made tortillas and fried them in sunflower oil. The result was amazing! The tortilla tastes like a chicken taco or even a flauta. I topped it with lettuce, tomatoes, sour cream and cilantro. Super easy and super delicious. A complete meal all rolled into one tortilla!
Also highly recommend Masienda masa, it is single origin heirloom masa. You can buy it direct or from Amazon. It's flavor absolutely cannot be beat.

Ingredients

6-2 tortillas serving size
  1. 2 cupsMasienda red corn masa
  2. 2 cupswater
  3. 1 lborganic ground chicken
  4. 1 tspcomino
  5. 1 1/2 teaspoonssalt
  6. 1 tspguajillo chili powder
  7. 1 tspancho chili powder
  8. 1/4 tsphabanero chili powder
  9. 1/4 tspaji chili powder
  10. 1 tspgarlic powder
  11. 1 cupsunflower oil
  12. Toppings
  13. 8 ozshredded lettuce
  14. 8 ozshredded cheese
  15. 8 oztri colored tomatoes
  16. 1/2 cupsour cream
  17. 4limes cut into wedges
  18. Micro cilantro garnish

Cooking Instructions

    Place ground chicken with all spices, garlic powder and salt into a bowl and mix together until well seasoned.

    Next add red corn masa and water, into a food processor and process mixture for about 2 minutes or until smooth. Then add seasoned chicken and process for about 1 to 2 minutes more. Place mixture in a bowl and cover with plastic wrap and place in the refrigerator for at least 1 hour or overnight.

    After an hour or overnight, take mixture and make in a small ball, about the size of a golf ball and place on tortilla press shape into a tortilla. If using a tortilla press, make certain to use either plastic wrap or parchment paper to keep from sticking to press. If you do not have a press, that's okay, simply place on parchment paper and roll out with a rolling pin that has been lightly dusted with red masa.

    Next heat a large pan, medium-hi heat, with about 1 cup sunflower oil. Carefully place tortilla in the oil and fry each side about 3 to 4 minutes each side. Once cooked place on a large paper towel lined plate or platter and season with a sprinkle of salt.

    Serve with your favorite toppings. I used lettuce, tri colored tomatoes, shredded cheese, sour cream and micro cilantro. Slices of lime on the side. I added El Yucateco Habanero Sauce on top of mine. Hope you try it and love it as much as my family did.
