What dish brings us back to family meals more than lasagna? Delicious and always ready to surprise us!

Cut the zucchini into small cubes, removing the green skin.

Slice the shallot and add it to a skillet with olive oil, garlic, and the diced zucchini.

Cook the zucchini for a few minutes until softened, then blend them with the béchamel sauce, a pinch of salt, and a grind of black pepper until smooth and creamy.

Meanwhile, cut the provolone into small cubes.

Take the lasagna noodles and, in a baking dish, start assembling the lasagna by layering the zucchini béchamel sauce, noodles, more zucchini béchamel sauce, diced zucchini, and grated cheese. Repeat the layers until the baking dish is full.

Finish with a layer of provolone and sprinkle with grated cheese.

Bake in a preheated oven at 400°F (200°C) for 20 minutes until golden. Serve.
