Sweet Potato Gnocchi with Chicken Curry

Steam the sweet potato for about 20 minutes. Let it cool, then mash with a fork. Mix in the flour, season with curry powder and salt.

Lightly flour a board. Shape the dough into small logs, cut into bite-sized pieces, and roll each piece over the back of a fork to form gnocchi.

Cook the gnocchi in batches in simmering salted water. As soon as they float to the surface, remove them with a slotted spoon.

In a large skillet, sauté the chopped shallots and diced red bell pepper in coconut oil. Add the chicken pieces. Once the chicken starts to cook, add the gnocchi. Sauté everything over high heat, then add curry powder, fish sauce, and coconut milk. Cook until the sauce thickens. Adjust seasoning with salt, turn off the heat, and stir in Thai basil leaves and grated Parmesan cheese.

Serve on a plate with a few fresh basil leaves, slices of red chili pepper, and extra grated Parmesan cheese as desired.
