1 litre3% brine
180 gscotch bonnets
150 gmedium red chilli
20 ggarlic
300 gred peppers (i.e. 2)
2 tspsmoked paprika
1 tspblack peppercorns
Sauce
150 gpineapple chunks
1 tbspapple cider vinegar
Juice of 1 lime
1 cupsaved brine
1medium onion
1/2 tspxanthan gum
1 tbsphoney
