  • 1 litre3% brine
  • 180 gscotch bonnets
  • 150 gmedium red chilli
  • 20 ggarlic
  • 300 gred peppers (i.e. 2)
  • 2 tspsmoked paprika
  • 1 tspblack peppercorns
  • Sauce
  • 150 gpineapple chunks
  • 1 tbspapple cider vinegar
  • Juice of 1 lime
  • 1 cupsaved brine
  • 1medium onion
  • 1/2 tspxanthan gum
  • 1 tbsphoney
