Chickpea Salad with Greens and Tahini Sauce

Preheat the oven to 425°F (220°C) with convection if available.

Place the chickpeas in a baking dish or sheet pan (they should be close together, not spread out).

Drizzle with olive oil, add paprika, cumin, coriander (if using), and season with salt and pepper. Toss to coat and roast in the oven for 35 minutes. Let cool for 2-3 hours.

For the tahini sauce, mix all the ingredients in a bowl, adding the hot water a little at a time until you reach a smooth, creamy, but pourable consistency. Taste and season with salt and pepper.

In a large skillet, heat the olive oil over medium-high heat. Add the chopped kale or spinach. Cook, stirring, until wilted. It will reduce in volume a lot!

Place the chickpeas in a salad bowl, top with the greens, parsley, and mint. Drizzle with the tahini sauce and toss to combine.

When ready to serve, add the cucumber slices. Enjoy!
