Cooking Instructions

Sear the beef in a skillet. (Do not season with salt or pepper.)

After removing the beef, add water to the skillet and scrape up the browned bits with a wooden spatula. Simmer to reduce slightly.

In a separate bowl, combine the ingredients marked with a ☆. Add about 2 tablespoons of the pan juices from step 2 and mix well to make the sauce.

Slice the green onions. Arrange the beef on a plate, top with radish sprouts and bonito flakes, then pour the sauce over everything.

(Photo updated 5/24) In the top photo, I used myoga ginger instead of radish sprouts.

For a milder sauce, you can simmer all the ☆ ingredients together in the skillet in step 3. Use whichever method you prefer.
